Eden is our haven in Pisa – a place where evolution and harmony exists. Once an orchard full of lush stone fruit and apples, it is now a flourishing organic vineyard. Every year it offers up more of its beauty, and our knowledge of this landscape grows. This Chardonnay from Eden is sumptuous and complex, the vineyard’s story imbued in every glass.
Whole bunch pressed, settled overnight in stainless steel before moving into barrel with full solids. Wild fermentation, with 80% undergoing malolactic fermentation and 20% stopped prior to completion. Aged for 11 months in barrel, including 20% new oak, before blending and bottling.
Golden, straw colour. Aromas of grilled Central Otago stonefruit, green apple with hints of flint. Complex and enticing, precise acidity with subtle oak adds to the complexity. The finishes with delicious baked brioche.
